  • Add oil to skillet at medium-high heat. Wait 2-3 minutes.
  • Slice potatoes ¼ inch thick using a knife or Mandolin slicer.
  • add one layer of potatoes to skillet, careful to not stack on top of one another.
  • After 3-4 minutes, flip if golden brown. Add onions, then flip again.
  • Serve when both sides are golden brown and crisp.
