This simple Cake Mix Peach Cobbler is a quick and effortless summer dessert sure to please. Topped with a golden buttery crust and topped with vanilla ice cream, you won't be able to resist this amazing southern dessert.
Preheat the oven to 350 F. If using a 9x13 pan, spray with baking spray. If using a cast iron skillet, grease with melted butter or shortening.
To make the peach filling, add all of the ingredients to a medium sized bowl and mix until well combined. Set aside.
To make the topping, mix the cake mix and cinnamon together in a medium sized bowl. Use a pastry cutter or two forks to cut the butter into the cake mix until the mixture is crumbly.
Place the peaches into the prepared baking pan in an even layer. Next, sprinkle the cake mix topping over the top of the peaches in an even layer. Place 4 Tbs of sliced butter on top of the cake mix, leaving space between the pieces of butter.
Place the pan into the oven to bake for 1 hour or until the cake mix has baked through and is golden brown. Once baked, remove from the oven and place onto a cooling rack to cool slightly before serving.
Notes
Storage: Cobbler may be stored covered in the fridge for up to 3 days.
Substitutions:
Frozen peaches - Canned peaches may be used instead, however, they may be a lot softer after baking than the frozen or even fresh peaches will be.
Lime juice - Lemon juice may be used instead.
Almond extract - This can be completely omitted or vanilla can be used instead. Almond extract simply helps enhance the flavor of the peaches.
Yellow cake mix - White cake mix can be used instead.
Tips:
The peach filling can be made a day ahead and placed into the fridge until you are ready to use it.
This cobbler is delicious when served with vanilla bean ice cream.
