Ingredients

  • cup mojo sauce to marinate chicken, optional
  • 1 cup white rice pre-cooked
  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 4 chicken thighs bone-in, skin removed
  • 4 carrots chopped
  • 3 Yukon gold potatoes quartered
  • ¾ cup manzanilla olives with ¼ cup olive juice
  • ¾ cup tomato sauce
  • 2 tbsp Adobo seasoning
  • 1 cup chicken broth
  • 1 bay leaf

Instructions

Prep

  • Pre-cook 1 cup of white rice (in pressure cooker, that's 1 c. water to 1 c. rice at high pressure for 3 minutes, then natural release for 10 minutes).

  • Marinate chicken in mojo sauce for at least 2 hours.

Instant Pot Chicken Fricassee

  • On sauté setting, add olive oil and onion and sauté until translucent.

  • Add chicken thighs (without mojo), carrots, olives, potatoes, seasonings, tomato sauce, bay leaf and broth. Veggies and chicken should be submerged.

  • Pressure cook on high for 18 minutes with 10 minutes natural release, then vent.
