This Cuban / Puerto Rican inspired Instant Pot Chicken Fricassee is the ultimate comfort stew.

- 1½ cup mojo sauce to marinate chicken, optional
- 1 cup white rice pre-cooked
- 1 tbsp olive oil
- 1 yellow onion diced
- 4 chicken thighs bone-in, skin removed
- 4 carrots chopped
- 3 Yukon gold potatoes quartered
- ¾ cup manzanilla olives with ¼ cup olive juice
- ¾ cup tomato sauce
- 2 tbsp Adobo seasoning
- 1 cup chicken broth
- 1 bay leaf
Prep
Pre-cook 1 cup of white rice (in pressure cooker, that's 1 c. water to 1 c. rice at high pressure for 3 minutes, then natural release for 10 minutes).
Marinate chicken in mojo sauce for at least 2 hours.
Instant Pot Chicken Fricassee
On sauté setting, add olive oil and onion and sauté until translucent.
Add chicken thighs (without mojo), carrots, olives, potatoes, seasonings, tomato sauce, bay leaf and broth. Veggies and chicken should be submerged.
Pressure cook on high for 18 minutes with 10 minutes natural release, then vent.
