Southern Fried Potatoes with Onions
These Southern-style fried potatoes with sweet caramelized onions are great as a side for breakfast or dinner.
- 2 medium Yukon Gold potatoes
- 2 tbsp vegetable oil
- ½ yellow sweet onion
- 1 tsp salt
- ½ tsp black pepper
Add oil to skillet at medium-high heat. Wait 2-3 minutes.
Slice potatoes ¼ inch thick using a knife or Mandolin slicer.
add one layer of potatoes to skillet, careful to not stack on top of one another.
After 3-4 minutes, flip if golden brown. Add onions, then flip again.
Serve when both sides are golden brown and crisp.
