Easy Potato Soup
This easy potato soup is made with only 4 ingredients, including sour cream, milk and salt/pepper.

- 5 large potatoes russet
- 1 cup sour cream
- 2 cups whole milk
- 1 tbsp salt or to taste
- 1 tbsp pepper or to taste
peel and quarter your potatoes
in a large pot, boil potatoes until fork tender, then drain
mash potatoes (leave some lumps if you prefer)
add in sour cream and stir, then add in the milk, salt and pepper. Continue stirring.
place back on low heat until the soup comes to a simmer, then serve warm.
- store in the fridge for up to 3 days
- freezing is not recommended
- top with cheddar, bacon, or scallions
