Easy Potato Soup

This easy potato soup is made with only 4 ingredients, including sour cream, milk and salt/pepper.

Ingredients

  • 5 large potatoes russet
  • 1 cup sour cream
  • 2 cups whole milk
  • 1 tbsp salt or to taste
  • 1 tbsp pepper or to taste

Instructions

  • peel and quarter your potatoes
  • in a large pot, boil potatoes until fork tender, then drain
  • mash potatoes (leave some lumps if you prefer)
  • add in sour cream and stir, then add in the milk, salt and pepper. Continue stirring.
  • place back on low heat until the soup comes to a simmer, then serve warm.

Notes

  • store in the fridge for up to 3 days
  • freezing is not recommended
  • top with cheddar, bacon, or scallions
