What is Fricassee de Pollo?
Fricasse (French) translates to a cooking method which combines sautéing and stewing.
And, pollo simply translates to chicken.

Cuban / Puerto Rican – style fricassee de Pollo
This Cuban style chicken fricassee combines Goya seasonings and is sometimes called “Pollo en fricassee.”

This hearty chicken stew is easy to make right in your Instant Pot or pressure cooker.
how to make Instant Pot chicken fricassee
First, start out by marinating your chicken in a ziplock bag with mojo sauce (I use Goya brand).
Pre-cook your white rice (Instant Pot recipe in recipe card below).
Next, sauté onions until translucent.
Then, place all other ingredients into the pressure cooker/ Instant Pot.
Now, you’ll cook at high pressure for 18 minutes and it’s done! IP chicken stew, baby!
Can I freeze fricassee de pollo?
Use an air-tight freezer bag to seal leftovers and keep in the freezer for up to three months. Be sure to thoroughly thaw overnight before reheating.
I find that the chicken and rice thaw better than the veggies, so I like to just save those parts.
I typically add in my veggies after I’ve thawed and during stovetop cook time.
Instant Pot Chicken Fricassee
Equipment
- Pressure Cooker (like Foodi or Instant Pot)
Ingredients
- 1½ cup mojo sauce to marinate chicken, optional
- 1 cup white rice pre-cooked
- 1 tbsp olive oil
- 1 yellow onion diced
- 4 chicken thighs bone-in, skin removed
- 4 carrots chopped
- 3 Yukon gold potatoes quartered
- ¾ cup manzanilla olives with ¼ cup olive juice
- ¾ cup tomato sauce
- 2 tbsp Adobo seasoning
- 1 cup chicken broth
- 1 bay leaf
Instructions
Prep
- Pre-cook 1 cup of white rice (in pressure cooker, that's 1 c. water to 1 c. rice at high pressure for 3 minutes, then natural release for 10 minutes).
- Marinate chicken in mojo sauce for at least 2 hours.
Instant Pot Chicken Fricassee
- On sauté setting, add olive oil and onion and sauté until translucent.
- Add chicken thighs (without mojo), carrots, olives, potatoes, seasonings, tomato sauce, bay leaf and broth. Veggies and chicken should be submerged.
- Pressure cook on high for 18 minutes with 10 minutes natural release, then vent.
