Baked Cheese Bruschetta
Bruschetta made on a crisp baguette with red wine vinegar, prosciutto, onions and ripe roma tomatoes.

- 3 roma tomatoes ripe
- 1 yellow or white onion
- ¼ cup red wine vinegar
- ¼ cup olive oil
- 1 French baguette hard and crusty on outside
- 1 pkg prosciutto
- 1 cup shredded mozzarella cheese
- 1½ tbsp Italian Seasoning
Bruschetta
Preheat oven to 415°F and line baking sheet with parchment paper or non-stick spray/olive oil.
Slice baguette into ½ inch sections.
Brush on a layer of olive oil to both sides of baguette slices.
Place a section of prosciutto on top of each baguette.
Stir tomato/onion mixture once more. Place a tbsp of mixture on each prosciutto.
Top with mozzarella cheese and bake for 10-12 minutes, or until cheese is forming a golden crust on top.
