Diced and Air Fryer Roasted Yukon Gold Potatoes are the perfect side for any weeknight dinner.

Instructions

  • Slice the baby potatoes in half. Place the potatoes into a mixing bowl.
  • Add the avocado oil, Italian seasoning, table salt, black pepper and garlic powder.  Mix together ensuring the potatoes are evenly coated.
  • Put the potatoes into the Air Fryer, cook for 20 minutes at 400F, turning after 10 minutes.
  • After 20 minutes, remove from the air fryer and serve immediately.

Notes

Potato variations
  • Russet- lots of flavor inside
  • Red- creamy and healthy
  • Sweet potatoes- rich in nutrients
  • "Baby potatoes" or "new potatoes" work easily with this recipe because they're already tiny and chopping is a breeze.
Tips
  • Spray with an oil spray if desired.
  • Pre-heat your air fryer for extra crispiness.
  • Use a spatula or spoon to flip your potatoes over in the middle of cooking.
