Ingredients

  • 3 tbsp unsalted butter
  • ½ yellow onion
  • 2 tbsp cloved garlic minced
  • 1 tsp salt
  • 1 tsp freshly ground pepper
  • 2 cups broccoli florets
  • 1 cup matchstick carrots or carrot chips
  • 32 ounces vegetable stock or chicken stock
  • 1 cup grated cheddar cheese
  • ½ cup heavy cream
  • 8 oz cream cheese optional, extra creamy

Instructions

  • Melt butter on high sauté setting of Instant Pot. Add onions and sauté until translucent.
