- baby potatoes– also called “new potatoes”, any type will work, but I prefer Yukon Golds
- olive oil– avocado oil or vegetable oil also works
- salt
- black pepper
- garlic powder
- Freshly chopped parsley: optional, garnish
It’s possible to find baby golden potatoes or Yukon Gold Potatoes if you look hard enough. Yukon Gold potatoes are the best for this recipe.

I like to keep the skin on my potatoes because it’s faster, easier and healthier.
If you remove the potato skin, you lose a bit of crisp, but you can still air-fry skinless potatoes. Just be sure to coat all the pieces to keep them from sticking to the inside of your air fryer basket.

Instructions
- Slice the baby potatoes in half. Place the potatoes into a mixing bowl.
- Add the avocado oil, Italian seasoning, table salt, black pepper and garlic powder. Mix together ensuring the potatoes are evenly coated.
- Put the potatoes into the Air Fryer, cook for 20 minutes at 400F, turning after 10 minutes.
- After 20 minutes, remove from the air fryer and serve immediately.
