Ingredients for oatmeal monster sandwiches

Step 1: Make the monster cookies
- Preheat the oven and line a baking tray with parchment paper.
- Mix wet ingredients.
- Take another bowl and mix the dry ingredients: flour, oats, salt, and baking soda and keep aside. Combine and add in the M&ms and sprinkles and mix it well.
- Place scoops on a baking tray keeping at least two inches apart. Press m&m’s into the top to make them stand out. Bake.
- Cool.
Step 2: Mix the frosting
- Beat ingredients and add to a piping bag, then flip a cookie and add the frosting.
- With the help of a spatula, place another cookie on top.

- ½ cup butter room temperature
- ½ cup granulated sugar
- ½ cup light brown sugar
- 1 egg
- 1 tbsp vanilla extract
- 1 cup all-purpose flour
- 1 cup rolled oats
- ½ tsp baking soda
- ½ tsp salt
- ¼ cup m&ms
- ¼ cup sprinkles
For the Frosting
- ½ cup butter room temperature
- 1 cup powdered sugar
- 1 tbsp heavy cream
Instructions

- Preheat the oven to 180 C / 350 F and line your baking tray with parchment paper.
- Take the butter in a large bowl and microwave it for 10 seconds. Add both the sugar to this and beat on medium speed (using an electric beater) till everything is combined well for 2-3 mins.
- Now add in the egg and vanilla extract and mix till it's incorporated well.
- Take another bowl and mix the dry ingredients: flour, oats, salt, and baking soda and keep aside.
- Now add dry mixture to the butter mixture and mix till the dry ingredients are incorporated well. Add in the M&ms and sprinkles and mix it well. (No need to chill, can be used right away)
- Scoop the dough with an ice cream scoop, and place them on the baking tray keeping at least two inches distance between each scoop. Bake for 15- 18 mins.
- Once baked, cool them completely before frosting.
Frosting Instructions
- Take a large bowl, add in the softened butter and beat on medium speed till it's creamy. Now add in the powdered sugar in batches along with the heavy cream and beat till it's light and creamy.
- For assembling the cookie you can either use a piping bag to pour frosting as per your liking or simply layer one side of the cookie with the help of a spatula and place another cookie on top.
