Ingredients
Peach Filling
- 4 cup fresh peaches *or thawed
- ½ cup brown sugar
- 3 tbsp sugar
- 3 tbsp lime juice
- 1 tsp salt
- 1 tsp vanilla extract
- 1 tsp almond extract
Crust Topping
- 1 box yellow cake mix
- 2½ tbsp cinnamon
- 10 tbsp butter room temperature, cubed
Additional Topping
- 4 tbsp room temperature butter sliced
Instructions
- Preheat the oven to 350 F. If using a 9×13 pan, spray with baking spray. If using a cast iron skillet, grease with melted butter or shortening.
- To make the peach filling, add all of the ingredients to a medium sized bowl and mix until well combined. Set aside.
- To make the topping, mix the cake mix and cinnamon together in a medium sized bowl. Use a pastry cutter or two forks to cut the butter into the cake mix until the mixture is crumbly.
- Place the peaches into the prepared baking pan in an even layer. Next, sprinkle the cake mix topping over the top of the peaches in an even layer. Place 4 Tbs of sliced butter on top of the cake mix, leaving space between the pieces of butter.
- Place the pan into the oven to bake for 1 hour or until the cake mix has baked through and is golden brown. Once baked, remove from the oven and place onto a cooling rack to cool slightly before serving.
Notes
- Substitutions:
- Frozen peaches – Canned peaches may be used instead, however, they may be a lot softer after baking than the frozen or even fresh peaches will be.
- Lime juice – Lemon juice may be used instead.
- Almond extract – This can be completely omitted or vanilla can be used instead. Almond extract simply helps enhance the flavor of the peaches.
- Yellow cake mix – White cake mix can be used instead.
- Tips:
- The peach filling can be made a day ahead and placed into the fridge until you are ready to use it.
